Here is a list of my favorite OS X apps, and all of them are now Universal Applications:

Safari - Web browser, my default browser.
Camino - Web browser based on Mozilla’s Gecko layout engine.
Mail.app - Email client that comes with each copy of Mac OS X.
Adium - IM client based on GAIM. It talks to AIM, MSN, Jabber/Gtalk, Yahoo, and some others.
iChat AV - IM client that connects to AIM, and Jabber. Best solution for Mac-to-Mac A/V conference.
Skype - IM client, cross platform. The latest beta version works with video conference too.
iLife ‘08 - A collection of “digital lifestyle” softwares. It consists of iPhoto, iTunes, iMovie, iDVD, GarageBand, and iWeb.
NewsFire - RSS reader, good UI too. Vienna would be another choice, it’s free.
LaunchBar - My choice of program launching utility over QuickSilver, although QS is free.
Xcode - IDE for developing software on Mac OS X. It’s free too.
MacJournal - Blogging software. This is what I use for writing this blog.
TextMate - The best text editor on the earth, period.
Chick of the VNC - VNC viewer.
Xtorrent - Gnutella and Bittorrent P2P client.
CSS Edit - Visual CSS editor, a handy tool.
Fink - Unix ports for Mac OS X. Darwin Ports is another option.
VLC - Media player. It plays Divx, Xvid and a lot more formats.
Comic Life - A cool app for creating comic-like pictures.
VisualHub - A video encoding utility.
iShowU - Another cool app that captures video from screen, in realtime. It’s useful for creating video tutorials.
iStumbler - A wireless (WiFi) discovery tool.
KisMAC - It’s a stumbler app.
Paparazzi! - A very cool utility to take screenshots of webpages.
QIM - Chinese input method for OS X.
RapidWeaver - A user friendly website building app.
SuperDuper! - A great tool for making backups.
Toast Titanium - It’s a CD/DVD burning software.
Transmit - A FTP client.
UnRarX - It’s a utility for expanding RAR archives.
